Phoenix locals love this hidden gem at Ta’Carbon. Crowded tables fill the space daily. This week, it gained national fame, topping the 2025 Restaurants of the Year list and showcasing Arizona’s best Mexican eats.

USA TODAY named Ta’Carbon one of the top 44 US eateries. Owner Gilberto Trujillo expressed great honor. “More customers might come!” he laughed. Trujillo and Manuel Aldecoa launched the first location in Glendale in 2008. Three spots now serve metro Phoenix.

What Makes Ta’Carbon Special

Ta’Carbon introduced a charcoal grill in Phoenix in 2008, bringing Southern Arizona and Northern Mexico flavors up north. Taco fans in the Valley appreciate the Sonoran traditions, featuring flour tortillas and beef.

They choose USDA prime Angus beef for every dish. They grill the carne asada to juicy tenderness. “Meat is everything,” Trujillo said. He sees toppings as extras. The success of the Peoria spot led to adding an ice cream shop next door.

The taco hazz stands out as the must-try dish, packed with carne asada, cheese, and green chilies. Trujillo and Aldecoa perfected the recipe. “It’s an old Mexican classic,” Trujillo noted. Arizona’s best Mexican eats are kept traditional here.

They also offer meats like al pastor and barbacoa, served in tacos, burros, or platos. Silky beans accompany the platos. A big salsa bar is provided for all orders. Agua fresca or Mexican soda is suggested to drink.
