As the star of the latest season of Netflix’s Chef’s Table: Legends, Oliver is also launching his Jamie’s 10 Skills Food Education platform in the U.S. This free program is aimed at helping middle and high school students learn essential cooking and nutrition skills.

During an appearance on Media on April 29, Oliver shared two simple, delicious, and healthy recipes that families can enjoy together: Classic Tomato Spaghetti and a Green Chopped Salad.

Classic Tomato Spaghetti Recipe

“This is a fantastic midweek meal. It’s easy, versatile, and full of flavor.” – Jamie Oliver

Ingredients:

  • Fresh basil (1 handful)
  • 1/2 medium onion, sliced
  • 1 garlic clove, sliced
  • 1 lb 2 oz ripe tomatoes or 1 can (14 oz) whole tomatoes
  • Olive oil (1/2 tbsp)
  • Red wine or balsamic vinegar (1/2 tbsp)
  • Salt and black pepper
  • 6 oz whole wheat spaghetti
  • Parmesan cheese (1/4 oz), optional

Instructions:

  1. Chop basil leaves, reserve some for garnish. Finely chop onion, garlic, and basil stalks.
  2. Cook onion in oil until soft (about 7 minutes). Add garlic and basil stalks, then tomatoes and vinegar.
  3. Break down canned tomatoes, season, and simmer for 15 minutes. Add chopped basil.
  4. Meanwhile, boil salted water and cook spaghetti until al dente.
  5. Reserve a cup of pasta water, then drain spaghetti.
  6. Mix spaghetti with sauce, adding a splash of pasta water to loosen.
  7. Serve with grated Parmesan and basil garnish.

Tip: Add spinach, peas, or arugula to elevate this simple dish!

Green Chopped Salad Recipe

Salad Ingredients:

  • 4 scallions
  • 1/2 English cucumber
  • 1 handful fresh basil
  • 2 ripe avocados
  • 1 round lettuce
  • 1 small tub cress
  • 1¾ oz cheddar cheese (optional)

Dressing Ingredients:

  • 6 tbsp extra virgin olive oil
  • 2 tbsp red wine vinegar
  • 1 tsp English mustard
  • Salt and black pepper

Instructions:

  1. Chop scallions, cucumber, and basil on a large cutting board.
  2. Halve and peel avocados, add lettuce and cress.
  3. Crumble cheese if using, continue chopping everything together.
  4. Make a well, pour in dressing ingredients.
  5. Mix thoroughly and serve immediately.

Optional Dressings to Try

All dressings follow the golden rule: 3 parts oil to 1 part acid.

  • Vinaigrette: Olive oil, Dijon mustard, vinegar, garlic
  • Yogurt Dressing: Yogurt, vinegar, olive oil
  • Balsamic: Olive oil, balsamic vinegar
  • Lemon Dressing: Olive oil, lemon juice

Shake all in a jar. Dress salads just before serving.
